Omer has provided an Asian, Thai, Mexican, and American ispired vegan menu at Kaya's Kitchen in Belmar for 15 years. Among the eatery's most popular dishes are vegetarian spinoffs of dishes on other menus. For example, their take on buffalo wings is made with tofu or tempeh (cooked and fermented soybeans). Then there are the spare ribs made with seitan (wheat-meat), homemade hummus, the portobello sandwich, and the vegetable jambalaya over rice. Basatemur, a cultivator of tomatoes, herbs, zucchini, squash and peppers, ensures that 90 percent of vegetables served at Kaya's Kitchen are organically grown. In business, Basatemur operates under one edict - "Do good and pay the bills." He says, "You get back what you put in (and) you have to choose morals over profits sometimes."
